Brewing started in 1875. That has been for 145 years until 2020.
We produce Otoko zake (extra dry sake with slight acidity) which has a solid taste because of the moderately hard shikomi water.
Things which never change and things which change with the times. Both are important and the sake expresses both “Fueki Ryuko”( to integrate new things while being eternal) sake brewing and “Wajou Ryoushu”(Japanese spirit brews good sake, and good sake brews the Japanese spirit).
